The Vermentino di Gallura DOCG is the only Denomination of Controlled and Guaranteed Origin of SARDEGNA. This white wine of excellence owes its inimitable identity to the acidic pH granite soils of the northeast of the island. Between salty winds and strong temperature excursions, the Vermentino grape expresses here a minerality and a structure that clearly distinguishes it from other Mediterranean productions, making it a symbol of Sardinian identity viticulture worldwide.
The history of the Vermentino grape in Sardinia intertwines with ancient winemaking traditions. Archaeological findings in Gallura have evidenced traces of winemaking dating back to the Nuragic era – with particular reference to the Middle and Recent Bronze Age (1400–1200 B.C.) – in askoi (asymmetric Nuragic ceramic vessels) and ceramic containers from various areas of Gallura, as documented by materials from the National Archaeological Museum of Sassari. The first written mention of the grape in the area is attributed to the historian Vittorio Angius in the 19th century; the Count of Rovasenda (1877) still reported its use mainly as table grapes.
The path towards institutional recognition was divided into two stages: the DPR March 24 1975 for the DOC and the DM September 11 1996 for the DOCG, making it the only Sardinian wine to achieve the highest denomination. The regulations were subsequently updated with the DM March 7, 2014.
The DOCG ‘Vermentino di Gallura’ is reserved for the white wine already recognized as DOC with DPR March 24, 1975. The regulations admit two main types: the basic and the Superior, the latter subject to particular requirements specified in the subsequent articles. It should be noted that the specification in the updated version (DM 2014) has expanded the types allowed to also include Sparkling, Sparkling, Passito and Late Harvest, each with its own production and analytical characteristics.
The varietal heart of the denomination is the Vermentino grape, which must be present in the company vineyards in quantities ranging from 95% and 100%. The residual presence, up to a maximum of 5%, of other non-aromatic white grape varieties 'recommended' and/or 'authorised' for the province of Sassari. The explicit exclusion of aromatic vines protects the characteristic sensorial profile of the denomination, preventing varietal interferences that would alter the typical nature of Vermentino Gallura (regulation, article 2 - Ampelographic composition).
Grape production area
Production is strictly limited to the geographically defined territory as 'Gallura'. The area includes the entire territory of twenty-one municipalities: Aggius, Aglientu, Arzachena, Badesi, Berchidda, Bortigadas, Calangianus, Golfo Aranci, Loiri Porto San Paolo, Luogosanto, Luras, Monti, Olbia, Oschiri, Palau, S. Antonio di Gallura, S. Teresa di Gallura, Telti, Tempio Pausania, Trinità d'Agultu and Viddalba, all in province of Sassari, plus the municipalities of Budoni and S. Teodoro in province of Nuoro. The geographical delimitation substantially coincides with the historical and cultural extension of Gallura, strengthening the inseparable link between denomination and territory (article 3 - Production area).
The 40 wineries adhering to the Consortium produce almost every year six million bottles, on average, thanks to 2,500 hectares cultivated in Gallura with Vermentino DOCG (Agri-food Quality District of Vermentino DOCG, 2026).
Gallura Terroir: the signature of granite and pH
Only vineyards with DOCG admission suitable exposure and slope, formed on soils deriving from granite disintegration, located at an altitude not exceeding 500 m above sea level The planting distances, training systems and pruning methods must not alter the characteristics of the grapes, musts and wines, with a ban on any forcing practices.
On the water front, the following is allowed:rescue irrigation for no more than two interventions before ripening – derogation justified by the often dry summers in Sardinia – while new plantings and replantings must provide for a minimum density of 3,250 vines per hectare.
The yields are precisely contained: not more than 10 t/ha in specialized cultivation for the basic type, 9 t/ha for the Superior, with a limit of 3 kg per vine valid for both. In favorable years, quantities may exceed these limits provided that the overall production does not exceed the established maximums by 20%, within the same grape/wine yield limits (article 4 – Viticulture rules).
Vinification and varietal purity
The grapes intended for the vinification of wines with DOCG «Vermentino di Gallura» must have the
following minimum natural volumetric alcoholic strengths: 11% for the basic version; 10% for sparkling and semi-sparkling versions; 12% for superior, passito, and late harvest.Grapes intended for the production of the type «passito» must have undergone a withering on the vine and/or in suitable premises until reaching a minimum natural volumetric alcoholic strength not less than 15% vol’.
The maximum grape/wine yield is set at 70%: if exceeded, but not beyond 75%, the excess loses the right to the DOCG; above 75%, the right to the denomination for the entire product is forfeited.The maximum grape to wine yield for the «passito» type must not exceed 50% referring to fresh grapes’.
The vinification operations must take place within the delimited area, while thebottling must be carried out within the borders of the Sardinia region to protect the traceability and added local value of the entire supply chain. The wine may not be released for consumption before January 15 of the year following the harvest (article 5 – Vinification rules).
Organoleptic and analytical characteristics of Vermentino di Gallura DOCG
At the time of release for consumption, the basic type of Vermentino di Gallura DOCG must meet the following organoleptic requirements:
- color: straw yellow with light greenish reflections;
- aroma: subtle, intense and delicate;
- taste: flavor alcoholic, soft, with a slightly bitter aftertaste. And this is the most recognizable organoleptic signature of Vermentino gallurese.
The mandatory minimum analytical parameters are instead:
- alcohol content minimum total volumetric 12%;
- maximum sugar residue 5 g/l;
- minimum total acidity 4.5 per thousand;
- minimum net dry extract 16 per thousand (article 6- Consumption characteristics).
The specific criteria established for the different wine categories are listed in the table below.

Designation and presentation
The DOCG «Vermentino di Gallura» prohibits the addition of any qualification other than those provided for in the production regulations, including adjectives like «extra», «fine», «choice», «selected» and similar.
On the labels of DOCG «Vermentino di Gallura» wines possessing these characteristics, the wording « must be reportedsweet».
It is allowed to precede the denomination with the geographic name «SARDEGNA». The specification allows mention ‘vineyard’ on the label, provided that it is followed by the corresponding place name, that the related area is registered in the vineyard register, that the vinification takes place in separate containers, and that the mention appears in the grape declaration, registers and accompanying documents
‘Except for sparkling wines without the vintage indication and for semi-sparkling wines, for all other wine types, it is mandatory the indication on the label of thevintage of grape production' (article 7 – Designation and presentation).
Packaging art and guarantees for the consumer
‘DOCG «Vermentino di Gallura» wines must be released for consumption in appropriate glass bottles, also regarding labeling, with the characteristics of a fine wine and sealed with a cork stopper or other closures permitted by current regulations.
For the type «passito» bottles with a capacity greater than 0.750 liters.
For the type «Sparkling» the following is allowed cork stopper traditional with anchoring without capsule. For sparkling wines, plastic mushroom stoppers are not permitted.' (article 8 – Packaging).
The saline minerality of Vermentino di Gallura is directly attributable to the composition of granitic soils: the disintegration of granite generates acidic or sub-acidic soils (generally low pH), poor in limestone but rich in potassium and phosphorus.
This soil acidity acts as an ‘accelerator’ for the freshness of the wine: it prevents the early degradation of organic acids in the grape and promotes slow maturation, which preserves the liveliness of the sensory profile. The combination between the soil pH and the feldspar dissolution – rich in sodium, potassium, and mica crystals – transfers to the glass that vibrant sapidity and that persistent finish that constitute the true DNA of the Gallura terroir.
The microclimate Gallura – very sunny days, winds coming from the Tyrrhenian Sea and the Costa Smeralda, marked temperature excursions between day and night – promotes the optimal development of aromatic precursors and ensures acidic freshness even in warm vintages. The result is a straw-yellow wine with greenish reflections, floral, fruity and almond notes, vibrant sapidity and persistent finish.
Vermentino di Gallura DOCG lends itself to a wide range of pairings thanks to its balanced organoleptic profile:
- raw fish, crustaceans and seafood (the minerality and fresh acidity enhance oysters, scampi, lobster and carpaccios);
- first courses with seafood sauces such as pasta with clams, bottarga or sea urchins;
- light white meats and fresh or semi-aged Sardinian cheeses like young pecorino;
- cuisine Mediterranean vegetarian with roasted vegetables and legumes.
Foodies are advised to favor the most recent vintages, for a fresh and immediate profile, or the Superior for greater structure and aromatic complexity. Favoring products with the certification organic – which several producers in Sardinia adhere to, thanks also to the windy microclimate that constantly dries the vineyards from night humidity, reducing phytosanitary pressure – for better protection of ecosystems and biodiversity.
