Italian bread: white art, biodiversity and nutrition
The category of GIFT dedicated to Italian bread, it celebrates a pillar of the Mediterranean Diet and a symbol of the territorial identity of Made in Italy, with over 250 types registered.
Diversity reflects the agronomic vocation of the regions: in the South, durum wheat and ancient grains for yellow-curd and long-life breads (e.g. Pane di Altamura DOP); in the Centre-North, soft wheat and local varieties for a wide range of formats. We also explore nutritional enrichment with seeds, olives and legume flours, and the tradition of 'sicco' bread (without salt) from Tuscany, Umbria and Marche.
Quality depends onart of fermentation, such as the use of sourdough to improve digestibility, aroma and preservation, and responsible artisanal and industrial baking techniques. Each format, from the Sardinian Carasau puffs to the Ferrara braids, optimizes the crust-crumb ratio.
We analyze the challenges of the sector: labeling and transparency (fresh vs. pre-cooked bread), sustainability of the supply chain (traceability, organic, local cereals) and responsible innovation (reduction of sodium, increase in fibre).
GIFT it is an information hub for operators, buyers and professionals, offering a complete vision of Italian bread between cultural heritage and innovation.
