Italian pizza: artisanal tradition and innovation for export
The category of GIFT (Great Italian Food Trade) dedicated to Italian pizza, it explores the symbolic dish of Made in Italy in the world, a sector that combines cultural identity, food safety and global competitiveness, from art recognized by UNESCO to the high-value frozen food industry.
Authenticity lies in the management of biochemical processes and in the quality of ingredients: we delve into fermentations and maturations (sourdough, digestibility), the use of certified ingredients (tomato, DOP mozzarella, EVO, ancient grain flours), and traditional specialties such as Pizza Napoletana STG and regional variations.
We enhance the industrial sector of frozen pizza, a strategic asset for exports. We analyze how the Italian industry standardizes quality by replicating artisanal characteristics, innovations in conservation (IQF rapid freezing) to preserve structure and freshness, and logistics and safety solutions for the cold chain and compliance with international standards (IFS, BRC, FSSC 22000).
We monitor global challenges: trends clean label labeling, the systems of traceability digital to guarantee the Italian origin of the raw materials, and updates on regulatory compliance for theexport of composite products.
GIFT it is an information hub for operators, buyers and distributors interested in the value of Italian pizza, between gastronomic tradition, industrial innovation and sustainability.
