Salice Salentino Reserve, Apulian specialty
The precious Salice Salentino Reserve is aged for at least 24 months, 6 of which in barrels. This is the main characteristic that distinguishes this red wine compared to the older brother Salice Salentino and determines its main differences from an organoleptic point of view. Over time, the color of this excellent red wine changes quickly: from ruby, in fact, it turns towards brick, and brings out flavors of leather and licorice, while on the nose scents of ripe red fruits emerge.
Obtained from mature and selected Negroamaro and Malvasia Nera grapes, mostly hand-picked, Salice Salentino Reserve, like other red wines destined for aging, undergoes two types of fermentation, alcoholic and malolactic. Often the latter takes place in oak barrels or, in some cases, in barriques.
The grapes used to produce the Reserve, like the wine from which it takes its name, must be produced in the area that includes the namesake town, with all its administrative territory, Veglie and Guagnano in the province of Lecce, and San Pancrazio and Sandonaci in that of Brindisi. Other areas allowed by the production regulations are Campi Salentina and Cellino San Marco.
