Montasio can be used in many recipes, but one in particular represents a great dish of the Friulian tradition originating from the Carnia mountains: Frico. To prepare it, Montasio aged for 3 months is required. The cheese is sautéed in a pan with the addition of coarsely grated potatoes, sliced bacon, and chopped onion. Everything is layered and turned several times until a nice golden color is achieved.
There are two versions of Frico: the soft one just described, and a crispy one prepared with grated Montasio and corn flour. In this way, Frico becomes moldable and is ideal for preparing delicious baskets to hold other dishes.
Montasio pairs perfectly with vegetables like asparagus and can be used in many recipes. It is perfect in baked dishes, such as leek gratin, but also in pies, risottos, soups, and pasta like gnocchi.
