Sugar-free jam, ideas and types

The sugar-free jam does not exist, it is immediately necessary to clear the field of ambiguous hypotheses. Indeed, while it is possible to produce specific types of jam without adding sugar (many companies in the Italian industry make extra and organic jams simply using freshly picked local products), it is also true that the final product will contain sugars by itself, as they are already naturally present in the basic ingredients, such as the fruit itself.

If by quoting the word “sugar“, instead, one refers technically and exclusively to sucrose, or the use of white sugar, it will be found that this can easily be excluded from processing or replaced with cane sugar, stevia, or aloe juice. There are many jam recipes without this ingredient, capable of enhancing the organoleptic properties of the chosen fruit through association with specific spices.

We can obtain jam without sweeteners from pears, strawberries, or apricots, for example, thanks to the thickening power and sweet taste of an apple, which releases its natural pectin when cooked. The optional addition of ginger or cinnamon can make the jam even more interesting.
