Amarone wine, the red of Valpolicella
The Amarone wine is one of the masterpieces of the wine scene red Italian. Characterized by intense scents of dried fruit, tobacco, and spices, the precious Amarone of Valpolicella has a fruity, dry, and full-bodied taste.
It is produced in the province of Verona and the regulations provide for the harvesting of fully ripe grapes and their arrangement in a single layer on bamboo, wood, or plastic racks. Placed in well-ventilated drying rooms located above the cellars, the grape clusters rest for 3-4 months, the time necessary for drying, under continuous manual control aimed at preventing the formation of harmful molds. A process that hints at the high quality of the raw material, right from its selection on the vine.
Its origin is curious, the result of a fortunate winemaking mistake from Recioto. This sweet red, left to ferment too long, actually transforms into a 'bitter' wine. Amarone della Valpolicella is a wine appreciated both aged and young and is ideal to accompany meat main courses, game, and aged cheeses. Veronese cuisine offers a refined risotto with Amarone wine. But it is also perfect at the end of a meal, perhaps seated by the fireplace.
