Basil, king among aromatic herbs
The basil – botanically known as Ocimum basilicum – is the king of aromatic herbs. Any variety, including Genovese Basil, is easy to grow at home. Naturally, it is sown in late spring or summer; however, it can be easily found almost all year round in small plants placed in convenient pots, in garden centers or supermarkets.
There are many varieties of Basil, but the most famous and appreciated cultivar is Genovese Basil which has received community protection by obtaining the PDO certification (Protected Designation of Origin). A certification given to foods whose qualitative characteristics are mainly due to the peculiarities of a specific territory.
The culinary use of Basil is very extensive; the dark green, very fragrant leaves are used to add flavor to sauces or to create true sauces, including the famous Genovese pesto. Like other aromatic herbs, Basil is also used to flavor extra virgin oil, vinegar, and to season soups and pizzas.
