Umbrian testo cake, the highest expression of the ancient Street Food, anItaly ancestral to discover, starting from the age of the Roman people. The “cake“, in fact, owes its name to the “testum“, a brick tile used in ancient times to bake flatbreads. It is a recipe created as a substitute for precious bread, ideal to accompany fieldwork (such as harvesting or grape picking) and to satisfy hunger in the absence of side dishes.
The authentic preparation passed down over time involves a dough of flour, water, yeast and salt, which is shaped round and then cooked on the testi, round cast iron plates about 3 cm thick. A very ancient preparation, which takes on different traditions and names in the Umbria region: for example “crescia” in Gubbio (where it was cooked near the fireplace) and “ciaccia” in the Tiber Valley.
A meal to be eaten quickly, whose usual fillings are: stracchino cheese and rocket, sausage and herbs, or ham and cheese. A classic street food and at the same time a renowned festive event on the shores of Lake Trasimeno, a true “street and lake meal“.
