Nougat, an ancient and delicious sweet
The Nougat is one of the most widespread and ancient sweets, although its origin is not certain. Traces of it are found, in different but all very similar forms, in many countries including India, the Middle East, North Africa and Europe; united by the presence in the territory of almond, hazelnut, pistachio and pine nut plants. Nougat was, therefore, already known among the recipes Of Sweets.
Widespread throughout the peninsula, nougat varies in every region in name and preparation, thus becoming cupeta, copeta, copata, cubbaita and coppetta; sweets similar to nougat and brittle, based on toasted seeds bound only with caramelized sugar.
Despite the numerous regional variations, there are mainly two types of torrone recipes: hard and soft. The difference between the two depends on several factors, primarily the cooking time of the mixtures. In the first, in fact, it can last up to 12 hours, while in the second it does not exceed two hours. A further variation consists of adding almond or hazelnut, creating respectively mandorlato and nocciolato. There are also modern and delicious torrone recipes in which the wafer used to cover the torrone isreplaced with coverings of dark, white, or flavored chocolate. Torrone, a delicious pleasure!
