ISO 22000 strategic planning
ISO 22000, planning in the spotlight. The reference standard in the agri-food sector, like every quality management system, pursues continuous improvement through four phases, among which planning represents the first and fundamental phase of an uninterrupted cycle represented by ‘plan – do what is planned – check – improve’.
According to ISO 22000, correct planning requires:
1 – analysis of hazard sources of processes that may interfere with the wholesomeness and safety of products;
2 – evaluation of critical points by estimating their severity and likelihood of occurrence;
3 – identification of preventive and control measures for such risks;
4 – definition of monitoring and verification activities;
5 – decision on actions to be taken in case of limit exceedance, i.e., of the acceptability values defined for the parameters used to monitor the product and/or process, in order to obtain confirmation or otherwise of product conformity.
