Primitivo di Manduria, Authentic Italian Masterpieces
Primitivo di Manduria is the region of Puglia’s DOC Italian red wine par excellence, and a symbol of its rebirth as a serious winemaker. The production area of Primitivo wine (containing at least 85% of this varietal) sits between the provinces of Taranto and Brindisi.
Rules governing making this masterpiece state that alcohol content cannot slip below a robust 13.5%. Despite its strength, it is soft and incredibly complex to the palate, with notes of spices and tobacco with age, becoming cocoa, coffee and vanilla in a Riserva, an indication applied after no less than 24 months of aging.
The Primitivo di Manduria Dolce Naturale sweet red wine, which obtained the coveted DOCG guaranteed origin mark in 2011, is also worthy of mention. This ruby-red specialty is produced with 100% dried Primitivo grapes through natural techniques – either on the vine, or specific structures in the sun with the use of netting or lattice.
Primitivo pairs well with the hearty fare that typifies local cuisine, especially grilled meats. Its sweeter cousin is ideal for pastries and herbed cheeses.
