Buffalo Mozzarella is a type of cheese originating in Campania. It is in a league of its own with a set of rules that come directly from the consortium that has safeguarded it since 1981. Italian Buffalo Mozzarella was strengthened further by European recognition for its protected origin certification, or Denominazione di Origine Protetta (DOP), which was granted in 1996.
Buffalo Mozzarella cheese can be produced exclusively with whole Buffalo milk, and the sole addition of rennet and salt. Compared to the more common variety made using cows, it is richer in protein, fat and mineral salts, not to mention flavor. For this reason the product is subject to a number of controls following production all the way to distribution and sale to end consumers.
