Pecorino Sardo, cheese of the shepherds

The tasty Sardinian Pecorino DOP is a cheese produced from whole Sardinian sheep's milk, rennet, salt, lactic ferments and can be found in two versions, sweet and mature (respectively 1-2 or 6 months of aging). It is among the most renowned typical Italian cheeses, a traditional food of many territories whose populations were dedicated to pastoralism. It has very ancient origins, because sheep farming has been a characteristic activity of the Sardinian economy since ancient times.

It can be said that Pecorino Sardo, a cheese loved all over the world, is one of the most evident demonstrations of the richness of the Italian gastronomic offer, largely due to the differentiation of the national territory. Made with raw materials only partially coming from the same areas as those used for another very famous pecorino, the Romano one, it differs from this in terms of transformation process and organoleptic properties. It is more delicate, less salty and pungent, an ideal ingredient for many recipes where the flavor of Pecorino Sardo - cheese required by the specification together with Parmigiano Reggiano - must not be predominant, like Genoese pesto.
