Truffles, amazing italian flavors

Truffles are the finest edible things in the earth. Italian truffles are subterranean jewels that grow next to roots and shrubs. They are relatively rare, and require the expertise of a truffle hunter, and frequently a dog (usually of the Lagotto breed), to be located. They are then dug up by hand.

The unique, consistent and penetrating aroma and flavor of white truffles has contributed to the growth of consumer attention around the world, not just from gourmets, but simple lovers of good food wherever they call home.

Differing in comparison to other European countries, all varieties of truffles are present in specific areas of the Italian countryside. White truffles found in Monferrato and the Langhe in Piemonte, with exemplary finds near Alba and Asti, can command extremely high prices. They are also uncovered in Molise, the southern part of Lombardy, in Emilia-Romagna, Abruzzi and in the proximity of San Miniato in Tuscany.

Black truffles are more commonly native to the regions of central Italy, with a widely coveted species harvested in the provinces of Florence, Arezzo and Siena. There is a summer varietal (called the scorzone) especially indicated for Umbrian cuisine.
