奶酪，意大利传统食物

奶酪，如果没有奶酪这个世界将会变成什么样？要是我们各种各样心爱的乳酪种类不存在了，那么美食肯定会失去最重要的一种味道。没有任何地方会像意大利一样感同身受，意大利奶酪呈现交响乐般的口味、质地和香味，对于从休闲食品到开胃菜，主食到主菜，甚至甜点都有不可替代的贡献。

奶酪制作的起源与今天映入我们脑海的艺术和myriad forms相比异常简单。它源于人们需要保存营养物质以备日后食用。但是对于不同类型的奶酪情况可能不同，基本过程可以被分成三步。在奶中加入凝乳酶，通过所谓的”发酵”过程，凝乳被分成固体凝乳和乳清液。凝乳过程之后通常是去除多余水分的过程。最后，要经过熟化，是指静置，或老化阶段，在这一过程中奶酪制作完成。

意大利奶酪是经过时间考验的实践产物。这让它的奶酪独一无二。原始材料无与伦比的质量，被发现巨大的品种数量，以及能创造独特产品的工匠和大型生产商的智慧。
