Mozzarella Cheese History, Where the Buffalo Roam

To begin with, these animals were primarily used as beasts of burden, but as time went on their milk was utilized for making cheeses like ricotta and mozzarella.

Following World War II it became widely known as a traditional specialty, and it spread rapidly from the 1970s onward.

Today, the Buffalo Mozzarella Campana DOP consortium controls the norms of how this amazing cheese is made, as well as sold, for what has finally become an international product that is sought after throughout the globe.
