The DOP – Denominazione di Origine Protetta certification is riserve for food and agricolture products in Europe, the characteristics and uniqueness of which are strictly connected to the area from which they originate, the raw materials used, and the know-how of local producers. All of the production stages of DOP products – from the initial ingredients to the transformation phase, even possible aging – are carried out in the traditionally delineated area which gives the final name to the product.
A DOP product is the only one which can boast a true link to the territory it comes from and represents. The protection of the name of the product also protects the land and traditions that have led to its creation. DOP products can be wine, meats, pasta, vegetables, fruit, cheese, as well as other items. The zones which create these products are also limited, which adds to their rarity and excellence.
